Turkey Spinach Salad with Cranberry Dressing

Turkey Spinach Salad with Cranberry Dressing Turkey Spinach Salad with Cranberry Dressing  


The combination of turkey and cranberries is a classic that's hard to beat, especially in this unusual salad. Serve for either lunch or brunch.

 
 
INGREDIENTS
Dressing:
1/2 cup whole-berry cranberry sauce
1/2 cup red wine vinegar
1/2 cup canola oil
1/2 cup honey
1/4 teaspoon cumin
- salt and pepper
 
Assembly:
4 cups fresh flat-leaf spinach
3 1/2 cups cooked turkey, white preferred
1 cup bean sprouts
 

METHOD

In a blender, combine all of the ingredients for the dressing except the salt and pepper. Blend until smooth. Taste, then adjust seasonings with salt and pepper. Cover and chill in the refrigerator.

Wash the spinach leaves and dry with a paper towel or salad spinner. Break off any stems. Cut the spinach into bite-size pieces and divide among four plates. Add the turkey over the top of the spinach, followed by the bean sprouts. When ready to serve, pour dressing on each salad.
