Sweet-and-Sour Mashed Potatoes Sweet-and-Sour Mashed Potatoes  

The use of sweet potatoes instead of white potatoes not only adds fall flavor to this traditional favorite but also great color. Fresh onion, spices, and sour cream give the dish a dazzling savory contrast.
 
 

 

INGREDIENTS

2 pounds sweet potatoes, scrubbed, peeled, and boiled
1/3 cup sliced green onions
1/2 teaspoon dried marjoram leaves
1/4 teaspoon cayenne pepper
1/3 cup chicken broth
1/2 cup nonfat sour cream or plain yogurt
 



METHOD

After boiling the potatoes, drain them well; cool slightly. Cut the ends from the potatoes; slip off and discard the peels.

Place the potatoes, onions, marjoram, and pepper in a large bowl of an electric mixer. Beat at moderate speed for about 10 seconds, or until potatoes are broken up. Add the broth and beat at a higher speed for about 30 seconds, or until smooth. Add the sour cream and beat on a low speed for about 20 seconds, or until blended. Serve immediately.
