Place
the apples, cider, and maple syrup into a medium-sized saucepan
coated with DuPont SilverStone® non-stick. Bring the mixture
to a boil; cover and reduce heat to a simmer. Cook for 15 minutes
(tightly covered) until the apples are tender. Remove pan from heat
and let cool. Transfer the apple mixture to a food processor and
pureé with the lemon juice, nutmeg, allspice, and cinnamon,
making a smooth or chunky sauce as desired. Serve slightly warmed
or chilled.
