Fresh Red Cherry Relish
Servings: 4 to 6 Prep: 5 minutes — Cook: 5 minutes
 


Fresh Red Cherry Relish  


This time of year, cherries are at their peak of flavor and priced right. Use this relish on cold sandwiches made with roasted turkey, cold leftover pork or veggies such as spinach and shredded cabbage. The relish also makes a great topping for barbecued chicken or beef, and is perfect on scrambled eggs.

 
 

 

INGREDIENTS

2 tablespoons canola oil
2 cups coarsely chopped, stemmed and pitted red bing or ranier cherries
3/4 cup coarsely chopped purple onion
3/4 cup red wine vinegar
1/4 cup chopped toasted almonds
 


METHOD

In a medium skillet coated with DuPont SilverStone® non-stick, heat the oil and sauté the cherries and onion for 5 minutes until softened. Stir in the vinegar and almonds. Serve at room temperature or refrigerate until ready to use.
