Fruit Cones

Fruit Cones Fruit Cones  


A waffle cone filled with yogurt instead of ice cream makes this a fun snack for all. Eat with a spoon while crunching the cone on the way down . You may also use small sugar cones instead of waffle cones.

 
 

INGREDIENTS
1/4 cup cream cheese, softened
1/4 cup vanilla yogurt
1 waffle-style ice cream cone
2 tablespoons cherry jam
1 tablespoon dried cherries
2 tablespoons mini chocolate chips
4 (1/2-inch) slices banana
4 slices kiwi fruit
 

METHOD

In a small bowl of electric mixer, whip the cream cheese until soft and fluffy, about 2 minutes. Add the yogurt and whip until incorporated and creamy. Place the mixture into a plastic zipper baggie (freezer-weight), pushing the mixture toward one of the bottom corners of the bag. Snip off a small point at the corner and pipe the mixture into the cone, filling about 2 inches high. Stop and add a teaspoon of jam and a tablespoon of the chocolate chips. Resume piping until the yogurt is almost at the top of the cone. Add the remaining jam. Place the bananas and kiwi on top and sprinkle with the cherries and chips. Serve with a spoon.
