Watermelon Intermezzo on a Stick
Servings: 6 popsicles  
 


 

Look for small popsicle molds in kitchen-supply stores. Another way this recipe works is to pour the liquid into ice cube trays and use the cubes to dress up cool drinks.
 
 

 

INGREDIENTS

3 cups seedless watermelon, cut into chunks
1/2 cup fresh raspberries
1/2 cup sugar
2 tablespoons fresh lemon juice
1 1/2 tablespoons watermelon liqueur
 



METHOD

Place all of the recipe ingredients into a blender and puree until smooth, about 30 seconds. Pour through a strainer into a 2-cup measuring cup. Press down on the mixture to remove and drain as much liquid as possible. Pour puree in plastic popsicle molds and freeze overnight (or prepare as much as a week ahead of time).
