Cucumber with Mint Butter Sandwich

Cucumber with Mint Butter Sandwich  


Historically, a cucumber sandwich is the most popular sandwich at tea parties. Rather than just butter and cucumber on white bread, we've updated this classic sandwich.

 
 

INGREDIENTS
1 tablespoon sour cream
1/2 ounce fresh mint leaves, chopped
2 sticks sweet butter
1/8 teaspoon salt
2 large cucumbers, peeled and sliced thin
30 slices sourdough sandwich bread
 

METHOD

In food processor, blend the sour cream and mint. Add the butter 1 tablespoon at a time; pulse. Add salt and blend well. Spread half of the slices with a thin layer of mint butter. Add 5 to 6 cucumber slices to each half, slightly overlapping. Add the tops. Remove the crusts. Cut the sandwiches in half lengthwise.
