Chilled Tomato Bisque
Servings: 4
 

 

Serve this as a beverage or a cold soup. Cantaloupe-colored, the bisque may be served with oyster crackers as a soup and with cheese as a beverage.
 
 

 

INGREDIENTS

3 cups tomato juice
2 tablespoons tomato puree
4 scallions, minced
1/8 teaspoon thyme
1/2 teaspoon curry powder
Salt and freshly cracked pepper
2 tablespoons fresh lemon juice
  Grated rind of 1/2 lemon
1 cup sour cream
  Snipped fresh chives and green onion for garnish
 



METHOD

In a large serving bowl, combine all of the ingredients except the sour cream and chives. Chill for at least 2 hours. Just prior to serving, blend in the sour cream, sprinkle with chives and add a green onion as a stirrer.
