Baked Apple and Cranberry Oatmeal
Makes: Enough for a winter's full of breakfasts
 


Baked Apple and Cranberry Oatmeal  

Kids love this warm cereal made with a dry mix that you store and use as needed to cook up a piping hot bowl of oatmeal. Your overnight guests will also love it. The dry mix yields 12 cups; each cup makes two servings when baked.
 
 

 

INGREDIENTS

Dry mix:
4 cups old-fashioned oats
1 cup brown sugar
1 teaspoon salt
2 teaspoons cinnamon
1 cup raisins
1 cup dried cranberries
1 1/2 cups combination of toasted chopped nuts such as pecans, walnuts, and macadamia
1/2 cup toasted sunflower seeds
3 cups non-fat dry milk
   
Oatmeal:
1 cup prepared dry mix
1 cup boiling water
1 teaspoon butter
1 large apple of choice, peeled and cut into a small dice
1 cup dried cranberries
   
Assembly:
  Sour cream
  Dried cranberries
 



METHOD

Combine oats, brown sugar, salt, cinnamon, raisins, nuts, and dry milk. Stir well and store in a large airtight container.

To turn into an oatmeal breakfast, preheat the oven to 350°. Place 1 cup dry mix into a 12-ounce baking dish coated with DuPont SilverStone® non-stick, ideally a bean pot. Add boiling water, butter, apple, and cranberries, and bake uncovered for 40 minutes or until bubbly and lightly browned. Serve with a dollop of sour cream and a sprinkling of dried cranberries.
