Corn and Pomegranate Berry Salad

Corn and Pomegranate Berry Salad  

The pomengranate berry proves its versatility in this salad. There's a burst of flavor and color in every bite.
 
 

INGREDIENTS
Sauce:
1/2 cup green peas
2 cups fresh or frozen corn kernels
1 cup pomegranate seeds (about 2 medium pomegranates)
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 tablespoon honey
Salt and pepper
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh lemon thyme, chopped
 

METHOD

In a large serving bowl, mix together the peas and corn. Stir in half of the pomegranate seeds.

In a 1-cup measuring pitcher, mix together the oil, vinegar and honey, and pour over the salad. Season with salt and pepper. Sprinkle the pea/corn mixture with the cilantro and thyme. Top with pomegranate seeds and serve.
